Vanilla Bean

Botanical name: Vanilla Panifolia

In Madagascar, the vanilla blooming season lasts for 3 months, from October to December. However in these recent years, the trend tends to shift to November to January due to climate change.

The harvesting time of the green pods then last 2 to 3 months from July to September.

After the green pods pickling, the pods are cured. The vanilla curing process requires passion, precision, patience and know-how that’s transmitted from generation to generation. This process lasts from 3-6 months.
